Greg’s Grilled Whole Rainbow Trout

Serves 2. The fish was simply grilled in the style Greg remembers his dad preparing on their many camping and trout fishing trips when he was a kid in California.

  • 1- 1 1/2 lb. or 2- 3/4 lb. whole rainbow trout, gutted, grilled, scales on
  • 4 lemon slices halved for stuffing and 4 slices (to grill for garnish)
  • Olive oil
  • Salt and pepper
  • 2 cloves garlic, crushed and halved
  • Fresh herbs, Greg used dill and Italian parsley

Clean and oil grid on grill. Stuff trout with crushed garlic, lemon slices and herbs. Baste with olive oil. Season with salt & pepper.

Grill over coals, or medium heat if using a gas grill, for 4-6 min a side depending on thickness of fish. Check to make sure fish is barely opaque in the center at the thickest section (just back from the head).

While fish is grilling, grill 4 lemon slices till nicely browned on each side to use for garnish.

    Fabulous reading about history and love of fish, family, culture and life. Thank you for sharing this story. All of these tender and heart stuck memories need to stay alive somehow. You all are doing it together. I will try this recipe for sure……
