Grilled Sardines
Serves 4
- 12 good quality frozen, or very fresh Portuguese sardines, not scaled or gutted
- Coarse sea salt
- Lemon wedges
- Crusty bread
Thaw and pat dry sardines. Sprinkle with a generous amount of coarse sea salt. After 5-10 minutes brush most of the salt off.
Place sardines on hot grill, no need to oil it. If you do use a grilling basket coat the inside with spray oil or olive oil. Grill sardines over hot fire for 4-5 minutes a side or until just opaque in the center. If grill flares up just carefully lift sardines from the fire until flames subside.
Serve with lemon. Tear off a piece of bread and enjoy!
