Grilled Sardines

Serves 4

  • 12 good quality frozen, or very fresh Portuguese sardines, not scaled or gutted
  • Coarse sea salt
  • Crusty bread

Thaw and pat dry sardines. Sprinkle with a generous amount of coarse sea salt.

Coat the inside of a flat grilling basket with spray oil or olive oil. Grill sardines over hot fire for 4-5 min a side or until just opaque in the center. If grill flares up just carefully lift the basket up from the fire until flames subside.

Tear off a piece of bread and enjoy!
