Seasonal Delight! Michigan Corn Salad with Honey Smoked Salmon
It’s Michigan corn time! The farmers market is full of fantastic sweet, crunchy corn on the cob. This year’s harvest has been great. We haven’t had a bad ear all season. When the corn is this good we always buy some extra for my wife’s chili con elote or some delicious corn salad.
We have a few corn salad recipes on this site that are Mexican style with cilantro and tomatoes. Tonight I thought we’d try using basil and cider vinegar and flake in some nice chunks of our honey smoked salmon. The results were fantastic! A great side dish or light summer meal, this one’s a winner.
