Thai Mahi Mahi in Lettuce Wraps
Serves 4
- 1 1/2-2 lb. mahi mahi fillets, skinned and cut into 1/2 inch cubes
- 2 t olive oil
- 1/4 cup fresh cilantro, finely chopped
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup fish sauce
- 3 T fresh lime juice
- 2 T sugar
- 1 t red pepper flakes
- 2 stalks lemon grass, white part only, finely chopped
- 2 t grated fresh ginger
- 1/4 cup red onion, finely chopped
- 24-28 butter lettuce leaves
Heat olive oil over med- high heat and stir fry mahi mahi cubes until just opaque in the center (3-5 minutes).
Mix remaining ingredients in a medium mixing bowl, except for the lettuce leaves. Gently stir and marinate for 15 minutes in the fridge. Stir a couple of times to coat with marinade.
To serve spoon a heaping tablespoon or so into lettuce leaves.
