Thai Mahi Mahi in Lettuce Wraps

Serves 4

  • 1 1/2-2 lb. mahi mahi fillets, skinned and cut into 1/2 inch cubes
  • 2 t olive oil
  • 1/4 cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup fish sauce
  • 3 T fresh lime juice
  • 2 T sugar
  • 1 t red pepper flakes
  • 2 stalks lemon grass, white part only, finely chopped
  • 2 t grated fresh ginger
  • 1/4 cup red onion, finely chopped
  • 24-28 butter lettuce leaves

Heat olive oil over med- high heat and stir fry mahi mahi cubes until just opaque in the center (3-5 minutes).

Mix remaining ingredients in a medium mixing bowl, except for the lettuce leaves. Gently stir and marinate for 15 minutes in the fridge. Stir a couple of times to coat with marinade.

To serve spoon a heaping tablespoon or so into lettuce leaves.
