Happy 4th of July!
It looks like the weather this holiday weekend is going to be lovely. Perfect for some fantastic seafood on the grill! If you’re looking for delicious ideas, we have lots.
Today we’re receiving so many amazing fish and shellfish I’m even having trouble deciding what to serve. Should I plank some wild Alaskan king or sockeye salmon? Or maybe the Nantucket striped bass grilled with some fresh herbs would be nice. Swordfish with olive sauce is always a winner but then again we have whole Indian Brook brook trout coming in too, wrapped in pancetta and served over tomato corn salsa is so good. Octopus from Spain is wonderful grilled and so are the fresh Narragansett squid that just arrived. Portuguese sardines or head on Texas gulf shrimp are always a hit. The bronzino are looking great today, grilled with garlic, lemon and rosemary this dish is fantastic!
Choices, choices, choices. No matter what’s going on the grill, I’ll serve a first course of ceviche or Hawaiian poke, the Alaskan halibut or striped bass would be good for the ceviche and the #1 yellowfin tuna for the poke. Oh yes, and of course barbecued oysters. I’ll pick the biggest, fattest Nurembega oysters from the Damariscotta River in Maine and grill ‘em up with garlic butter barbecue sauce.
